Making stable foams with electric field

Abstract :
Liquid foams are a dispersion of gas bubbles in a surfactant solution. It is an out of equilibrium material, whose fate is definitely dramatic. In this talk, we will show experimentally how we can maintain the foam stable or trigger on purpose its collapse, by using electric field. To predict these behaviors, we will in particular consider how the foam poroelasticity can affect electroosmotic transport in the material.
